History: Hippocrates, the father of medicine, called the Black Elder a medicine chest. Throughout time country people have relied on the Elder for food and elderberries have been made into cordials, robs, jams, jellies, pies and wines. Homoeopaths use Sambucus in tiny doses, principally for catarrhal conditions with swollen membranes, congestion and excessive mucus production causing snuffles, spasmodic breathing, croupy coughs and fevers.
Science: Contains Vitamins C and P, anthrocyanic pigments and traces of essential oil, highly antioxidant. A trial in Israel (1996) found elderberries to speed recovery from colds.
